- 1 ½ cups flour; 1 teaspoon baking soda; 1 cup butter – room temp.; ¾ cup packed brown sugar; ¾ cup sugar; 2 large eggs; 1 teaspoon vanilla extract; 2 ½ cups rolled oats; 1 cup shredded coconut; 1-2 cups of butterscotch chips
- Preheat oven to 350; Cream butter and sugar; mix in eggs and vanilla; add dry ingredients; Drop ¼ cup of dough onto baking sheet 1 ½ inches apart; Bake 13 minutes or
until light brown around edges; cool on wire rack.
